my version of grandma's recipe (altered from great-grandma's)
Makes one 9 1/2" pie
1 pie crust (Grandma's 5 pies recipe or flax seed pie crust)
3 cup pureed roasted pumpkin [1]
¼ cup white sugar [1]
½ cup brown sugar [1]
1 egg
1 Tbsp butter
1 Tbsp cinnamon
1 Tbsp minched ginger, fresh
1/8 tsp ground cloves [2]
¼ tsp ground nutmeg [2]
½ tsp salt
1 cup milk
whipped cream for topping.
Bake crust.
Add all ingredients to a heavy bottom sauce pan and mix thoroughly with a whisk. Slowly bring to a boil, whisking periodically. Mixture will bubble dangerously once boiling; keep at a low boil while whisking for about 3-5 minutes or until mixure thickens.
Pour into baked pie crust.
Bake at 350 F for about 20 minutes or until set
Top with whipped cream afer cool.
